Cauliflower wings turned to ash after 12 minutes on max

I was testing a new crispy coating in my apartment kitchen on Tuesday and opened the basket to find black crumbles that smoked up the whole place, so did I just need to lower the temp to 375 or is cauliflower just too wet for this method?

Man, I gotta push back on this one. Cauliflower is the scapegoat here, not the real problem. You maxed out the heat and walked away, that's the issue. 12 minutes at max in an air fryer is basically a controlled burn, not cooking. I've done cauliflower at 400 for 18 minutes with a light oil and cornstarch coating and it comes out golden, not smoky. The wetness thing is overblown too, you just need to let the florets dry on a paper towel for a bit before you coat them. Honestly, if you set your machine to nuclear and forget about it, even bread would turn to charcoal. Lower the temp, check at 10 minutes, and stop blaming the veggie for your oven's aggression.
