The week my oven died mid rush and I finally got why the old guy at the shop checks his every Monday
Had a 40th birthday order due Saturday, 3 tiers, and my main oven gave out Friday night right when I was par baking. I ended up running everything through the little countertop oven in batches, and the cake was late by 2 hours, which felt awful. Monday I brought donuts to the shop and the old guy who's been baking since the 80s said he checks his elements every Monday morning before anything else, takes 5 minutes. So now I'm doing the same thing and I'm wondering if anyone else has a checklist they run or do you just wait for stuff to break?
