Showerthought: a scale taught me more about baking than 2 years of guessing
I was complaining to my neighbor Deb about my cookies coming out flat every time, and she handed me her kitchen scale and said her grandma in Omaha never used a single measuring cup. Turns out one cup of flour can weigh anywhere from 4 to 6 ounces depending on how you scoop it, which explains a lot about my last 9 batches. Has anyone else switched to weighing and noticed a real difference, or am I just late to something everybody already knew?
