Ran across a stat that said 40% of beef in the US gets ground into hamburger and it shook me a bit

I was reading the Beef Checkoff report last week and that number hit me hard because it means most people never get to experience a good cut like a Denver steak or a flat iron, has anyone else seen these numbers and felt the same way?

my butcher buddy told me that same stat and i was like no wonder chuck and sirloin are getting harder to find. i started buying whole primals and cutting them myself, gets you way better steaks for less money honestly.

yeah @mary_patel59 i totally get why youd say that and i respect the hustle of cutting your own primals for sure. but honestly i see it a little different. i feel like the real issue isnt just supply it's that people are sleeping on the cheaper cuts that are still out there. like chuck can be amazing if you cook it slow or even reverse sear it right. sirloin too if you know how to handle it. so instead of going through all that work i just work with whats available and learn to cook it better.
