Swapped to a vacuum sealer for primal cuts after fighting with butcher paper for 10 years
Finally broke down last spring and bought a $200 chamber sealer because I got sick of losing 30% of my ribeyes to freezer burn every 4 months, and now I can buy whole loins from the supplier in Omaha and portion them out without the meat turning into ice crystals by March.

Wait, you got a chamber sealer for $200? I thought those things started around $500 or $600 (like the Vesta ones and whatnot). Did you find a sale or get lucky at a garage sale or something? Because if there's a $200 chamber sealer out there that actually works, I need to know. I've been looking at the cheap vacuum sealers on Amazon and they always have mixed reviews about pulling liquid out of the bag before it seals. A chamber sealer for that price would be a no-brainer for me (I could finally stop worrying about my brisket getting freezer burn).

Man, that's exactly how these things go. You figure out pretty quick that the cheap gadgets you buy online are built to break or just plain disappointing, while the real deal is usually a bigger upfront cost but ends up saving you money and hassle in the long run. It's the same with everything from a decent kitchen knife to a good set of hand tools. You either pay a little more once or pay a little less over and over again, and the constant aggravation of the cheap stuff just isn't worth it. My neighbor bought three different sub-$100 vacuum sealers in five years, and they all either stopped pulling a seal or just jammed up on him. I watched him finally buy a chamber sealer last month and he just shook his head and said he should have done it from the start. People get hung up on the sticker price instead of looking at what the thing is actually supposed to do for you.
