Spent way too long trying to get my lentil soup right

Honestly, I tried making a big pot of lentil soup last weekend to save money, but getting the flavor right took me like 3 hours. I kept adding more salt and spices, but it just tasted bland until I finally threw in a splash of apple cider vinegar from the back of my fridge. Has anyone else had a cheap meal take forever to fix?

My last lentil soup tasted like dishwater until I added half a jar of cumin by accident. I was just throwing spices in from across the kitchen like a desperate basketball shot. It actually worked, but now my soup could double as a potpourri.

Tell me about it, I swear by a squeeze of lemon juice at the end for that exact reason. What kind of spices were you using, just the basic dried stuff from the cabinet? I find if you don't toast them in the pot with the onions first, they never really wake up.

Oh man, toasting is the real game changer. It only takes a minute in the oil before you add your liquid, but it makes the whole kitchen smell amazing and actually tastes like something. That dull spice taste is totally from skipping that step.
