Found out a 2 ounce steak portion is only about 120 calories, and it changed how I plate
I was reading the USDA food data sheet for a menu costing meeting on Tuesday and saw that a 2 oz cooked portion of flank steak is only around 120 calories. That surprised me because I've been treating 6 oz as a normal plate and that's more than 350 calories before any sides. How are you all handling protein portions on your lunch menus right now?
Wait, 2 ounces is only 120 calories? That seems way off from what I would've guessed. I always figured a small steak was at least 200, maybe 250. So a 6 oz portion is basically three of those little guys stacked up at 360 calories, and that's before you even look at the sides. No wonder my lunch plates have been running heavy, lmao.
