I finally realized I was overloading my flat top every morning

Been running the breakfast shift at a diner in Cleveland for three years and last Tuesday I watched my line cook drop just 8 eggs on the grill instead of my usual 20 and they actually came out perfect in half the time, so have you guys noticed a difference when you cut down the volume on a flat top?

8 eggs... perfect in half the time" but you're not running a home kitchen, you're running a breakfast rush.

Oh man, right! Like I'm supposed to carefully monitor a dozen eggs while I've got six people yelling about their bacon being crispy. It's cute advice until you're the short-order cook sweating through your apron.
