Just hit a full year of working from my van without a single internet crisis
My big problem was finding a solid connection in small towns. I tried using public Wi-Fi, but it was always too slow. Last month in a tiny Oregon town, I bought a prepaid SIM from a local grocery store for $35 and put it in my second phone. I used that phone as a hotspot for my laptop and it worked perfectly. Has anyone else found a good backup plan for spots with no real cell service?

That prepaid SIM trick is a temporary fix at best. You got lucky in Oregon but cell dead zones are everywhere out west. Relying on a second phone as a hotspot drains both batteries fast and leaves you with no real phone if the hotspot fails. Public Wi-Fi might be slow, but it's often more reliable than a weak cell signal you're trying to stretch. Your whole setup depends on a grocery store having the right SIM card, which is a huge gamble. Investing in a proper satellite messenger is the only real backup for no cell service.
