Appreciation post: I thought a fermentation crock was a total waste of money
My wife got me a 5-liter German one for my birthday last year, and I was sure my old mason jars were fine. After six months of flawless, mold-free sauerkraut batches, I'm a complete convert. Anyone have a good recipe for fermented hot sauce in a crock?

Ngl my mason jars have never failed me. Crocks seem like extra stuff to clean for the same result.

Seriously, I get it. I used a big crock for sauerkraut once and it was such a pain to move and clean. My regular old quart jars with the plastic lids? They sit on the counter, I can see what's happening, and I just wash them in the sink. Why make it harder?

People get so worked up about fermentation gear. Mason jars do the job just fine for most things. The whole crock thing feels like buying a special tool for a problem that doesn't exist. It's just pickling, not rocket science.
