I switched from oasis foam to chicken wire for large arrangements about a year ago
I used to build every big piece, like a church arch, with blocks of wet foam taped together. It was heavy and the stems would get stuck. After a wedding in July where a centerpiece fell apart, I tried a metal frame wrapped in chicken wire instead. It holds more water, the flowers last longer, and I can shape it way easier. What do you all use for structures on pieces over three feet tall?

A church arch made from taped foam blocks sounds like a nightmare waiting to happen. I can't believe you managed to keep those things together at all. The chicken wire idea is a total game changer.

Tried that once... made a huge mess.

Okay but what exactly were you trying to do? I mean, the phrase "made a huge mess" could mean anything from a small spill to a full-on kitchen disaster. Was it a cooking thing or like a home repair project? I feel like the cleanup story is always the best part.
