That's interesting because it reminds me of how we've gotten used to taking shortcuts with things that really do matter. We think we're saving time with the pre-made stuff but then we end up with a soggy crust or a store-bought cake that's just not the same as homemade. I've noticed it with a lot of things beyond baking - like how people buy those pre-chopped veggies at the store even though they cost more and go bad faster than if you just cut them yourself at home. The extra ten minutes it takes to do it the old way usually pays off in the end, at least in my experience. For your crust problem, I'd suggest trying the Pillsbury refrigerated roll-out crust, but even that can get a little soft if the filling is really wet.

You're telling me a 2mm gap wasted 45 minutes? Maybe the real issue is you were too busy blaming the door lock instead of checking the basics first... I've found half the time when you think it's a sensor problem it's actually something dumb like loose wires or a bad connection somewhere else. If you'd spent 5 minutes doing a voltage drop test you'd have known it wasn't the armature gap in the first place. Chasing ghosts is just part of the job but dont blame the hardware for your troubleshooting steps.

Oh man, that's wild... did the guy go into the whole seasoning spiel or just hand you the pan? My local hardware store guy did the same thing with cast iron a few years back and it totally changed how I cook. I was burning everything in a non-stick that was basically a Teflon ghost, and he just pointed at a Lodge skillet and said 'try this instead.' Now I've got three different sizes, my cornbread comes out perfect every time, and I even make smash burgers in it that taste like a diner... best random advice I ever got for sure.

Right there with you! Swapped to flat fees for my graphic design projects and it was such a relief not to watch the clock all day. Chasing 15 minute blocks made me feel like a robot instead of a creative person, plus clients would get weird about small charges. Fixed rates just feel way more chill and I actually get paid what I'm worth without all the overhead stress.
