Honestly seanjohnson, I see where you're coming from but draft kombucha is a total pain for a small cafe. Those taps need constant cleaning to avoid mold, and the lines can get funky fast if you don't sell a ton. It's a lot of extra work for maybe a couple sales a day. Bottles are just easier to manage and you can offer way more flavors without the hassle.

I used to think a little extra slack in the governor rope was fine until a safety circuit on a 15-story Otis unit in Philly tripped because of it.

My old foreman in Tampa swore by the quarter trick. He'd have us lift the rope at the midpoint, and if it gave more than a quarter-inch of play, we'd re-tension it. Honestly, it felt a bit superstitious, but his units never had a callback for governor issues in the five years I was there.

Honestly I did the same thing with eggs for years. My mom's cake recipe said to bring them to room temp and I just cracked them cold from the fridge every time. The cakes were always a bit dense and I couldn't figure out why. Finally let them sit out like she said and it was a totally different, lighter crumb. Felt like such a dummy for skipping that one simple step.

Oh man, I had the same question! I read that it uses a bunch of different sensors working together, like the lidar and the cameras. They basically create a live 3D map of the room to keep count. Pretty wild when you see it in action, right?
