inWas taught to always use a 3/8 inch drive for boiler tube rolling, but a new foreman in Cheyenne had me try a 1/2 inch. Now I'm not sure.
Read a forum post once where a guy swore by the 1/2 inch for more torque on the tough ones. Makes you wonder if the old rule is just habit.

inGot a tip from a line cook in a Portland food truck that fixed my hollandaise
That ribbon trick for hollandaise is a game changer for sure! My buddy had a similar moment with mayonnaise. He was always getting a thin, sad sauce until a cook at his old job showed him to add the oil literally drop by drop for the first quarter cup, like painfully slow. It turns the yolks into this thick, pale paste that can handle the rest of the oil in a steady stream without a care. He said it felt like learning a magic spell, and he hasn't broken a mayo since.

inBought a $30 vacuum sealer on a whim and it's already saved me more than that
Broken seal on a cheap container is annoying, sure. But calling it "wasting food" feels a bit much. Can't you just use the thing as a bowl with plastic wrap on top? Or move the leftovers to a different dish? Seems like a small problem to get that upset over.

Honestly, I've had the opposite luck with those cheap ones. Mine broke after a few months, just felt flimsy. Ended up wasting more food when it quit sealing right.

inWarning: my 3M dust extractor hose split right at the coupling yesterday
Didn't I read somewhere that 3M doesn't actually make those hoses themselves? It makes sense after what dakotacraig said about the plastic feeling like a cheap trick. I'd look for a generic heavy duty one from a shop supply place instead.
