Appreciation post: I picked frozen fries over fresh potatoes for my air fryer
The frozen ones came out way crispier in 12 minutes, no oil needed. Anyone else find fresh spuds just get soggy in there?

Ever wonder if the freezing process itself changes the potato's structure for better crisping?

Yeah, freezing breaks down the cell walls so they release more water and crisp up better.

My grandma always froze her fries before frying them, so there might be something to that. @umaanderson, that structural change you mentioned could explain her perfect results. What other old kitchen tricks actually have solid science behind them?
