Just realized I was overmixing my pie dough for years

I've been making pies for maybe 6 or 7 years and always wondered why my crust came out tough. My sister-in-law watched me make one last weekend and asked why I was working it so much. She showed me to stop when there's still visible butter chunks and it barely holds together. Made a batch that night and the difference was night and day. Anyone else have a family member point out a dumb habit you didn't know you had?

Man, my buddy Steve had this exact thing happen but with biscuits. He'd been making them for years and they came out like hockey pucks every time. His grandma finally watched him one Thanksgiving and just goes "You're killing that dough, son." She made him stop and barely pat it together and they came out perfect. He still brings it up like it's a trauma.

That butter trick is key, did you check your temp too? Cold butter straight from the fridge or did you let it sit out?

@uma_webb28 I always let it sit out for like an hour, but then my kitchen is basically a sauna so maybe that's cheating a bit.
