My 3rd attempt at sourdough finally rose, then collapsed in the oven

Tried a new starter recipe from a blog out of Portland last month, fed it for 9 days straight and it passed the float test. Everything looked fine until I slashed the loaf and it flattened into a pancake in my old gas oven, temp sensor showed 385 instead of 450. Has anyone else had issues with oven thermostats drifting after 15+ years of use, or is it just me?
