My sourdough starter went from smelling like nail polish to sweet in 9 days
I keep my starter in a Mason jar on the counter in my kitchen in Duluth and for the first week it smelled like straight acetone, which had me convinced I killed it. Turns out I was feeding it too much flour and not enough time, so a friend from my baking group told me to drop to one feeding a day and keep it at 76 degrees. By day 9 it smelled like yogurt and rose up double in about 4 hours, and now my loaves actually spring in the oven. How long did yours take to get past that funky stage? Did the smell change before or after you saw real rise?
Mine took almost two weeks to stop smelling like paint thinner (gross, I know). The smell changed about three days before I saw any real rise, which threw me off because I kept checking the jar expecting bubbles and getting nothing. What finally clicked for me was using warm water instead of tap cold, that alone cut the funky stage way down. Once it smelled like plain yogurt, the doubling started happening fast, like within a day or two. Now I just watch for that smell shift as my cue that things are on track.
