I thought the 'room temp butter' rule for cookies was just a fussy detail, but my last batch proved me wrong.

Wow, grating cold butter is genius, I'm totally trying that next time.

Actually, my last batch came out fine with butter straight from the fridge. I just grated it into the sugar with a box grater, which mixes in way easier. The texture was still really good, maybe a bit more chewy in the middle which I like.
