Finally logged my 200th brisket, the math surprised me
I keep a little notebook of every cook I do, mostly for temps and rubs. Hit 200 briskets this past Sunday, which took me about 4 years since I started counting. Turns out I've gone through roughly 60 gallons of fuel and 40 different rub combos. The weird part is that my first 50 were all over the place, but my last 50 are within a 5 degree window every time. I figured practice would help, but I didn't expect it to tighten up that much. Is there a number where you noticed your own cooks stopped being a gamble? I'm curious if that plateau is normal or if I just got lucky.
