Cutting 40 birds a day alone and my hands stopped hurting after I changed one thing
Last Tuesday I did 40 whole chickens by myself before noon because my helper called in sick, and around bird 15 my right wrist was killing me like always. On a break I watched an old guy at the shop next door break down a case of birds and noticed he never gripped the knife hard, he just let the blade do the work and kept his thumb off the spine. I tried it for the last 25 birds and finished 20 minutes faster than my usual pace with way less soreness that night. I think the years of squeezing the handle like a stress ball was half my problem, not the repetition itself. Curious if anyone else had to unlearn the death grip, or is that just how it has to be when you are moving fast?
Learning to stop strangling the handle is huge. Your grip should be loose enough that someone could smack the knife out of your hand, and the blade does the cutting, not your forearm. Took me years to figure that out too, and my wrists thanked me.
