Finally figured out why my rib racks looked rough on the bottom, all because of one dumb habit
For about 3 years I was cutting my racks straight off the bone side without checking how the membrane was sitting, and the bottoms always came out torn up. Last Tuesday a guy named Ray at the shop in Bellingham watched me do it and just said, hey, flip that thing over first. Turned out I was pushing the blade right into the meat because I could not see where the silverskin ended. Flipped it, peeled it clean in about 20 seconds, and the rack came out even all the way across. How do you all handle silverskin on a rack that is shaped weird on one end?
Well look at that, three years of fighting a membrane that just wanted you to look at it from the other side. Weird shaped ends are easy, just go slow and let your fingers find the edge before the knife does.
