Hit 30 years at the same cutting block last Friday and it got me thinking
I started apprenticing at a small shop in Portland back in '94. Never thought I'd still be behind the same counter three decades later. When my boss handed me that little plaque at the end of shift, I realized I've broken down something like 15,000 primal cuts in this room. Crazy to think about how much the trade has changed since then. Anyone else stuck around somewhere longer than you figured you would?

Nah, I disagree - a rut is when you stop growing, not when you grind.
