Hit exactly 100 pounds of trim before lunch last Saturday - first time ever

Been cutting for about 4 years now and I usually land around 70-80 pounds of trim by noon. But last Saturday I had a big order of chuck rolls come in and I just got into a crazy rhythm (you know that zone where everything flows?). Knocked out 103 pounds by 11:30 and had to stop and actually weigh it twice because I didn't believe it. The trick was switching to a slightly longer knife stroke on the fat cap instead of the little quick chops I usually do. Any of you guys track your trim weight goals or just eyeball it?

I've never tracked weight like that but 100 pounds is serious work. Switching up your knife stroke makes a big difference, I found that out when I started doing longer sweeps on briskets. My numbers jumped way up once I stopped fighting the fat cap.
