A line cook's honesty changed how I see my own food
Last month at a small place in Portland, this kid around 22 told me my chile Verde was too safe. He said I needed to lay off the cumin and let the tomatillos do the work. At first I got defensive, but then I tasted it next to his version and he was right. His was brighter and cleaner, and I've been adjusting my recipe ever since. Has anyone else had a younger cook correct them in a way that actually stuck?
