Debate: Did a $300 knife sharpener actually save me or waste my money?

Last year I dropped $300 on an electric sharpener for the kitchen, thinking it'd cut down on downtime between services. Now I'm torn because my edges feel inconsistent compared to when I used stones. Anyone else swear by one method over the other or am I just using it wrong?

Electric sharpeners are too aggressive for most kitchen knives, they remove way more metal than stones do and leave a ragged edge. Stick with stones or a guided rod system for consistent results, that $300 gadget is probably giving you a burr you can't feel. Try finishing with a few passes on a fine stone after using the electric one, that balances out the inconsistency without wasting your investment.
