Last Saturday service was an absolute nightmare, best shift of the month
Every single ticket came in at once for 45 minutes straight, I had 8 pans going and three burners on fire. How do you handle the chaos when the whole dining room decides to order at the exact same second?

Maybe it's just me but 'best shift of the month' after a nightmare service is a take I can't quite get behind. I mean, I get that having a ton of tickets means money in the bank and a busy night can feel good when you're in the zone. But having three burners on fire sounds like a safety issue more than a win. You should probably not be letting fires go on that long, a little one is fine but if they're actually catching, that's a kitchen hazard. Maybe check your hood vents and make sure your oil temps are right, those flare ups can get out of hand quick if you're not careful.

The real win here is that 45 minute stretch gave you perfect data on your station setup. I had a similar 5 pan blowout a few months ago and realized my reach-in was four steps away instead of right behind me. Minute per ticket adds up fast when you're walking that extra distance. Track exactly where you reached for things during that rush and shift your station around before next weekend. Your flow will be way smoother even if the tickets come in hot again.
