Picked between a $40 Victorinox and a $180 Japanese gyuto for my first real knife
When I finally got serious about cooking I stood in the store for 20 minutes holding both. I went with the cheaper Victorinox and put the extra $140 into a decent stone and a Thermapen. Two years later the blade still takes a razor edge in about 90 seconds on the 1000 grit side. Anyone else think the expensive knife hype is way overblown for home cooks?
