The way most people mince garlic is just wrong

I was at a friend's dinner party last Saturday and watched three different people smash garlic cloves with the flat of their knife, then try to chop the slippery mess. If you want proper fine mince, you need to start with a sharp knife and slice through the clove lengthwise first, then do your cross cuts. I learned this from an old line cook in Portland back in 2012 and it saves me at least 2 minutes per clove in my own kitchen. Anyone else notice how many home cooks skip the basic prep steps?

Amen to that, nothing worse than watching someone fight a slippery garlic mess.

Ugh yes, that's the worst. I've had garlic cloves fly right out of my hand and bounce across the counter more times than I can count. It's such a simple thing but it can really test your patience.
