My home espresso shots taste totally different at 6 AM versus noon

I've been dialing in this same Brazilian bean from Blue Bottle for 2 weeks now, and I swear the same grind setting pulls a bitter 28 second shot in the morning but a sweet 32 second one after lunch. Turns out my kitchen humidity swings about 15% between those times, and that changes how the grounds pack in the basket. Has anyone else tracked their brew times by hour of day, or am I just chasing ghosts with this cheap hygrometer? I'd love to hear if temperature swings mess with anyone else's puck prep.
