Switched my coffee water from tap to bottled and now my usual beans taste flat
I have been using the same Ethiopian beans from a local roaster for 8 months, and last month I finally tried brewing with bottled spring water instead of my tap. The first cup tasted cleaner but also kind of boring, and now I can actually pick out which flavors came from my pipes this whole time. Did I just ruin my favorite beans, or should I go back to tap and stop overthinking this?

Ethiopian beans soak up minerals different, so your pipes were basically seasoning the cup.
