So I was on one of those cooking boards looking up a baked ziti recipe last month and some guy in the comments said he never salts his water until after it comes to a rolling boil because the salt dissolves faster and you use less of it. I always dumped a big handful in cold water like my mom did. Tried it his way three times now and honestly I cannot tell the difference in the final dish, but I did notice I am going through way less kosher salt. My wife thinks I am nuts for even caring about this. It got me thinking about all the little kitchen habits we just inherit and never test. What is one cooking thing you did for years a certain way and then switched after reading or hearing one random person say otherwise?
