The dish pit sink pressure at my last place was a night and day change
Three months ago we swapped out the old spray valve for a new one with a higher PSI rating. The old one took about 40 seconds to clear a sheet pan, the new one does it in 15. Our water bill actually went down because we stopped running the sink full blast waiting for stuff to loosen. One of the line cooks even timed it during a slow Monday just for fun. It made me wonder why more kitchens don't check spray valve pressure during routine maintenance. Has anyone else seen a big jump in speed from just that one swap?
