My grandma's meatloaf recipe took 3 tries because I skipped the salt

So I tried making my Nana's meatloaf last week and it came out totally bland. I thought I remembered all the ingredients but I forgot she always adds a specific amount of salt. It took me making it 3 different nights before I finally called her and she reminded me about the 1 teaspoon of salt and a pinch of sugar. Has anyone else had a family recipe fall flat because you missed one little thing?

My grandma's meatloaf recipe took me 4 tries before I realized I was using salted butter instead of unsalted like she did. It's always the smallest things that trip you up when you're trying to recreate those old family meals. Solidarity on the struggle, it's frustrating when it takes that many attempts just to get one simple detail right.

You mentioned salted versus unsalted butter - did that extra salt really make that big a difference in taste?
