The day I realized I'd been using a chef's knife wrong for 8 years
I always held the knife with my index finger on the spine, thought it gave more control. Then a friend who cooks professionally watched me chop onions and just said 'grip the handle, not the blade.' Tried it that night and my cuts were way more accurate and my hand didn't cramp after 20 minutes. Anyone else learned a basic tool technique way later than they'd like to admit?
