One customer complaint about my filler work changed my whole sanding routine

Last month a guy in Phoenix pointed out waviness under his fender that I'd missed after two paint jobs. He said 'you're blocking too early,' so now I let filler cure 24 hours and use a guide coat before any 80 grit passes. Anyone else get burned by rushing the cure time?
