Sour cream in cake batter? I was a hater until last Tuesday
I always thought adding sour cream to cake was some internet fad from people who dont actually bake. Then my neighbor brought over a chocolate cake for my birthday and it was stupid moist. She finally told me her secret was a half cup of sour cream in the batter. I tried it on a vanilla sheet cake for a work thing and yeah, I get it now. The crumb is just different. Has anyone else had that moment where you ignore a tip for years and then feel dumb when you finally try it?

Wait, you really thought sour cream in cake was fake? That stuff is basically magic. I use it in every single layer cake now. My red velvet went from good to almost dangerous. Even my mom asked what I changed, and she never compliments my baking. Best part is it keeps the cake moist for days, not just the first night. Took me like five years to try it, but now I'm never going back.
