My brownies were a greasy mess until I watched a baker in Phoenix weigh her flour instead of scooping it.
I'd been using the same cup measure for years, packing it tight, and seeing her use a scale made me realize I was adding way too much, so do you think weighing ingredients is worth the extra step or is careful scooping good enough?

Wait you were making cookies without a scale this whole time, @paul_owens25? I can't even picture how that works for stuff like flour. My recipes would be a total mess if I tried using cups. A scale just makes everything so much simpler and way more exact. It's wild how much of a difference that one cheap tool can make.

Honestly though, how many people actually have a kitchen scale just sitting around? Cups are right there in the drawer and everyone knows how to use them. I've been scooping flour for years and my stuff turns out fine, it's really not that deep. If a recipe needs to be that exact, maybe it's just a fussy recipe. What's the worst that happens, your cookies are a little different each time? That's part of the fun.
