Tried sourdough with store yeast instead of my starter, actually glad I did
I have been feeding my starter for about 8 months now and it works fine, but last Tuesday I forgot to take it out of the fridge before work. I had already promised my neighbor I would bring bread to her dinner party that night, so I panicked and grabbed a packet of instant yeast from the store. I usually think commercial yeast is cheating, but I followed the same recipe and honestly the loaf came out softer and rose faster. My starter bread has more tang and a thicker crust, which I like, but this one was easier to slice and the neighbor asked for the recipe. I am not switching completely, but now I wonder if I only kept the starter out of pride. Has anyone else used both and settled on one for certain days of the week?

Did the same thing last month and my kids liked the fast loaf better, less chewy.
