Dropped $60 on a wireless temp probe at the Memphis in May booth and it died in the first pork butt
Bought it Saturday, the ambient reading drifted 25 degrees off my dial thermometer by Sunday morning and the probe tip crapped out on cook number two, so what is everyone using instead that actually holds up over a 12 hour brisket?
That line about the ambient reading drifting 25 degrees off your dial thermometer hits home because I went through the same thing and just kept buying cheap probes thinking I was saving money. I used to figure they all came from the same factory overseas so why pay more, but after my third one died mid cook on a brisket I finally got it. The cheaper units use a thin wire right where the probe meets the cable and that spot fails every time from the heat and the bend. What changed my mind was watching a buddy run a two probe setup where one reads the meat and one just sits on the grate, that way you always know if your numbers make sense. Now I check the grate probe in ice water and boiling water before every long cook, takes two minutes and tells me if it is lying to me. If the readings do not match up after that test then the thing is junk no matter what you paid for it.
