Oh honey, I hear you. That slow melt does make me nervous about cold shock too, especially for ferns. Maybe it works better in warmer climates like Phoenix where Aunt Carol is.

I finally stopped rinsing my pasta after draining it

My aunt from Ohio drilled the same thing into me about five years ago. She watched me rinse a batch of penne and just sighed real loud from the kitchen table. I was stubborn at first, but the difference is night and day when you skip the rinse. Now I pull the pasta out a full two minutes early and let it finish cooking in the sauce with that saved water. It coats every noodle way better, and you use less sauce overall which saves money in the long run. One thing nobody tells you though is to stir it constantly while it finishes in the pan, or the bottom will stick and burn.

Went through 6 gallons of fry oil in one shift before I realized the filter machine was clogged

@perry.karen that story about the BBQ place is rough, but it shows how these little things can mess up your whole system. It's like how people always check the big obvious stuff but forget the small parts that keep everything running smooth. Same thing happens with home appliances or car maintenance. You'll change the oil but ignore the air filter and wonder why the engine is acting up. Just part of life, always a hidden problem somewhere.
