Judge told me my ribs were 'too clean' and it still bugs me

At a comp in Tulsa last summer, this older judge pulled me aside after the turn-in and said my ribs looked like they came off a surgical tray. Said real pitmasters leave a little character, a little chew near the bone. I trimmed them to perfection, 14 racks, spent 6 hours on the WSM, and that one comment made me rethink everything. Has anyone else gotten feedback that goes against what you thought was winning technique? Do you actually leave more fat or bark on your comp ribs now?

Ha, that judge probably couldn't sauce his way out of a paper bag, so take it with a grain of salt. Maybe he was just salty you made him look bad with all that clean work, lol.
