Ditch the foil boat for the first few hours. That crutch hides the real problem, which is usually heat management or a bad cut of meat. The boat only works once you got a good bark set and the fat is rendering right. If your flat is coming out like leather, you're probably cooking too hot or pulling it too late. Learn to feel for that probe slide before you ever wrap anything.
