Thought pellet smokers were cheating until a guy at the KC Royal put a brisket in front of me
I always figured feeding a fire with a computer was basically microwave BBQ, but then he handed me a slice off his 14 hour pellet cook and I had to admit my stick burner never got bark that dark, so now I'm genuinely torn on whether to switch or just add one to the lineup, anybody here run both?
Man, the thing nobody talks about is wind. A pellet rig holds temp like a rock in calm air, but get a stiff crosswind on a cold morning and that fan fights for every degree while your stick burner just laughs and drafts harder. I run both and the pellet gets the overnight pork butts because I can sleep, but the offset still does every brisket for the family reunion. The real killer is you end up buying two of everything, two probes, two bags of fuel, two covers. If you have the room, add one instead of switching, you will not regret having the option.
