Tried cherry wood chunks on a pork butt, got candy bark instead of smoke flavor
Been using hickory and oak for 4 years. Picked up cherry at a local feed store cause it was cheap. Put 3 chunks in with my usual amount. Bark came out dark and sweet, almost like brown sugar. But the smoke taste was way lighter than I expected. My family loved it, said it was the best I made. I felt like I undercooked the smoke. Is that normal for fruit woods? Anyone else get surprised by a wood swap?
Family liked it more and you're calling that a problem? That's like being mad your steak came out perfect because you used a different pan.
Cherry's a whole different animal, way sweeter and milder than hickory, and that candy bark is basically what it does best.
Give it a few more runs, maybe mix in one oak chunk with two cherry if you want some backbone without losing that sweetness everyone's praising.
