My brother swore I should soak my wood chips for 2 hours before smoking, said it gives better smoke flavor. I did exactly that last Saturday and the brisket came out tasting like bitter ash, not even close to the sweet bark I wanted. He's been doing this for years and his briskets are always amazing, so I trusted him completely. Turns out he upgraded his smoker last winter and soaking chips is now pointless with his pellet setup, which he NEVER mentioned. Has anyone else been burned by outdated advice from someone who used to know better?
