Chased a bad roast for 6 weeks before figuring out my thermometer was 15 degrees off

I actually read an article from Cook's Illustrated a while back about thermometer calibration and they said something like 1 in 3 home thermometers are off by 10 degrees or more. I mean, it's wild how common it is. I got a cheap instant read from Amazon for like 12 bucks and it was reading 20 degrees high on ice water test. Now I check every new probe against boiling water and ice water before I even use it. Idk, maybe it's just me but I'd rather waste five minutes testing than six weeks like that post said.

Wait, SIX WEEKS? Oh man, that's brutal... I would have lost my mind way before that. The whole time thinking you're a terrible roaster when really it was just the thermometer...
