Pro tip: That $20 grocery store rotisserie chicken trick actually works

I was at the Stop & Shop in Medford last Tuesday and saw this older lady buying 3 rotisserie chickens. I thought she was nuts until she told me she stretches them for 4 different meals in one week. I tried it myself - shredded the meat for tacos, made broth from the bones, and got like 8 servings out of one $6 chicken. Has anyone else found good ways to stretch these things beyond the obvious?

You really stretching one chicken into that many meals? I'm not sure it's that big of a deal. It's a chicken, you eat it, you make broth from the bones. That's pretty standard stuff my grandmother has been doing since before any of us were born. I guess it's nice that people are figuring out they don't have to throw half the bird in the trash though.

Your grandmother knew what was up for sure. Most of these "hacks" are just old school common sense rebranded for social media likes. I've been doing the same thing with rotisserie chickens from the store, getting at least 4 meals plus stock out of one bird. The real win is when you save the skins and render the fat for roasting potatoes later.
