Appreciation post: dry-aging bags I was dead wrong about
After 4 months of using those Umai bags I thought were overpriced plastic nonsense, I finally got a 21-day ribeye that tasted better than the $18-a-pound stuff from the fancy shop downtown - has anyone else found the sweet spot timing for different cuts?

Dude same here. That 21 day window is legit magic for ribeyes.

Yeah exactly, that three week mark is where the magic happens... just don't push it past 30 days or you'll regret it.
