Had a massive freezer failure on a Friday afternoon in July
The compressor on our main holding unit gave out, and we lost about 300 pounds of primals before we caught it. We had to scramble to move everything to our backup space and call in a rush order for the weekend's custom cuts. What's your backup plan for when the cold chain breaks?

Man, that's brutal. A buddy of mine runs a small smokehouse and his walk-in fridge died on a holiday weekend. He ended up renting a refrigerated truck from a rental place and parked it right out back for three days. Cost him a fortune, but it saved his whole inventory of brisket and ribs.

Ugh, that's the worst feeling. We keep a list of local restaurants with spare cooler space we can call in a real pinch, just a quick favor to stash stuff for a few hours. Having a couple of those portable AC units on hand can buy you time too, you just point them right into a smaller space. Honestly, the real backup is checking the temp alarms twice a day, no matter what.
